FAVOURITE CHICKEN RECIPES

I don't know about you but I am a chicken lover. I feel like we always make some sort of chicken recipe and I am not sad about it. There are definitely a few recipes that we always make on repeat because we love them so much, they are all family favourites and perfect for weeknight dinners as they are all super easy and fast.

I want to share my family's favourite chicken recipes with you today and hopefully you will love them as much as we do.

CREAMY MUSHROOM CHICKEN PASTA




INGREDIENTS

  • chicken breast

  • mushrooms

  • 1 tbs garlic

  • 2 tbs butter

  • 1 tbs dijon mustard

  • 1/2 cup of white wine

  • 1 cup of heavy cream

  • 1 tbs corn starch ( to thicken the sauce)

  • pasta of your choice,


DIRECTIONS

  1. Boil water and cook pasta according to directions

  2. Cut chicken breast into pieces and coat with flour

  3. Add chicken to a pan and cook until cooked through, remove from pan

  4. Add butter and mushrooms and cook until mushrooms are cooked down

  5. Add the white wine and dijon mustard

  6. Add heavy cream and let it come to a boil stirring occasionally

  7. Add cornstarch and stir

  8. Add the chicken back into pan and let it cook together for about 10 minutes

  9. Add cooked pasta into pan and stir together


 

CHICKEN ENCHILADAS




INGREDIENTS

  • shredded cooked chicken

  • 2 cans of red enchilada sauce

  • 1/2 cup sour cream

  • 1 cup of shredded tex mex cheese

  • 8 tortillas

  • 1 can of black beans rinsed and drained


DIRECTIONS

  1. Preheat over to 375

  2. Shred the cooked chicken

  3. Add cooked chicken to a pan and sauté

  4. Add 1 can of enchilada sauce, sour cream to the pan and cook all of it together

  5. Add a layer enchilada sauce to the bottom of a pan to coat the bottom

  6. Put enchiladas together inside the tortilla layer the chicken mixture add black beans and wrap up and place in a single layer in a oven safe dish

  7. After all the tortillas are all filled and a single layer is in the dish cover the enchiladas with the remaining enchilada sauce

  8. Sprinkle with cheese and place in the over for 20 minutes

  9. Serve with guacamole and sour cream

 

SWEET AND TANGY PULLED CHICKEN



INGREDIETS

  • 1 Package of pulled chicken crock pot seasoning

  • 1 Cup of ketchup

  • Chicken Breast

  • 1/3 cup brown sugar

  • Buns

  • Coleslaw


DIRECTIONS

  1. Place chicken in crockpot

  2. Mia together the seasoning packet, ketchup and brown sugar

  3. Por over the chicken

  4. Cook in crockpot of 8 hours on low or 5 hours on high

  5. Pull chicken out and shred apart, place back into sauce and let cook for another 15 minuted

  6. Get coleslaw ready( I usually just buy pre packaged)

  7. Toast your buns

  8. Add shredded chicken mixture to the buns top with coleslaw.

 

CAJUN CHICKEN BOWL



INGREDIENTS

  • chicken thighs

  • cajun seasoning

  • 1 cup of jasmin rice

  • 1 red pepper

  • 1 yellow pepper

  • 1 onion

  • avocado

  • 1/3 cup mayo

  • 2 tbs buffalo sauce


DIRECTIONS

  1. Cut chicken thighs into strips

  2. Coat with cajun seasoning

  3. Cook in a large pan until cooked through

  4. In the meantime start cooking your rice according to package directions

  5. While rice and chicken cook slice up your peppers and onions and cook in a separate pan

  6. Make the chipotle mayo sauce: combine mayo and buffalo sauce and some cajun seasoning in a bowl

  7. When everything is cooked layer your bowl in sections like pictured
